Three small lamb kofta bites seasoned with cinnamon, mint, and a pinch of sea salt, served with a spoonful of plain coconut yogurt for dipping, raw sauerkraut, and crisp apple slices. Lamb is the densest AIP-friendly source of bioavailable zinc.

Ingredients
- 100g (raw)ground lamb
- 30gunsweetened coconut yogurt
- 50gapple, thinly sliced
- 25graw sauerkraut
- 1/4tsp (1g)coconut oil
- 2tbspfresh mint, finely chopped
- 1tbspflat-leaf parsley, finely chopped
- 1/4tspground cinnamon
- 1/4tspsea salt
- pinchfreshly grated ginger (optional)
Instructions

In a small bowl, mix the ground lamb with the chopped mint, half the parsley, cinnamon, sea salt, and the optional ginger. Form into 3 small oval koftas.

Heat the coconut oil in a small skillet over medium heat. Add the koftas and cook 4-5 minutes per side until well browned and cooked through (internal 71°C / 160°F).

Transfer the koftas to a plate. Spoon the coconut yogurt alongside, scatter the sauerkraut and apple slices, and finish with the remaining parsley.
