AIP Rustic Beef Bites on Cassava Crackers with Apple and Coconut-Lemon Drizzle
A small AIP snack — gently warmed shredded beef chuck on cassava crackers with a coconut-cream and lemon drizzle, finished with thin slices of green apple. Ingredients
- 60g (cooked)shredded beef chuck, slow-braised
- 4(24g)cassava-flour crackers
- 1/4small (40g)green apple, thinly sliced
- 1tbsp (15g)coconut cream
- 1tsp (4g)extra-virgin olive oil
- 1/4(~12g juice)lemon, juiced
- 1small clove (2g)garlic, very finely minced
- 1tspfresh parsley, chopped
- pinchsea salt
Instructions

Warm the shredded beef in a small skillet over low heat with the olive oil and minced garlic for 2 minutes, just until heated through.

Whisk the coconut cream with the lemon juice and a pinch of sea salt in a small bowl until smooth.

Lay the cassava crackers on a plate. Top each with a small mound of warm beef and a thin slice of apple.

Drizzle the coconut-lemon sauce over the bites and finish with the chopped parsley.
