Ingredients
- 1/3tin (50g drained)tuna in water
- 1(5g)Brazil nut, finely chopped
- 2pieces (10g)sun-dried tomatoes, oil-packed, drained
- 1tsp (5g)capers, drained
- 1tsp (4g)extra-virgin olive oil
- 1/4(~12g juice)lemon, juiced
- 4(15g)gluten-free seed crackers
- 1tbspflat-leaf parsley, chopped
- pinchsea salt
- pinchblack pepper
Instructions

Drain the tuna and flake it into a small bowl. Add the lemon juice, olive oil, salt, and pepper, and stir to coat.

Mince the sun-dried tomatoes and capers, then fold into the tuna along with the chopped parsley.

Spoon the tuna mixture onto the crackers. Top each with a small pinch of the chopped Brazil nut.
