Ingredients

  • 5oz (140g)lean beef, diced
  • 1/2cup dry (95g)red lentils
  • 1medium (60g)carrot, diced
  • 1/4(40g)onion, diced
  • 2cups (480g)beef broth
  • 1tbsp (14g)extra-virgin olive oil
  • 1clove (3g)garlic, minced
  • 1pinchsea salt

Instructions

    Heat the olive oil in a saucepan over medium-high heat. Add the beef and brown 3 minutes. Add the onion, carrot, and garlic; cook 2 more minutes.

    Stir in the lentils and broth, bring to a simmer, and cook 15 minutes until the lentils are tender.
