
Beef and Mushroom Stroganoff over Rice

Ingredients
- 130glean beef sirloin or strip steak, thinly sliced
- 120gcremini (or white button) mushrooms, sliced
- 70gyellow onion, thinly sliced
- 1clovegarlic, minced
- 60mlunsweetened B12-fortified soy or oat milk
- 60gplain unsweetened dairy-free yogurt (soy-based, as sour cream)
- 1tspgluten-free tamari (GF soy sauce)
- 1tspDijon mustard
- 1tspcornstarch
- 1.5tbspolive oil
- 140gcooked brown rice (about 50 g dry)
- 1tbspfresh parsley, chopped
- 1pinchsalt and black pepper

If your rice is not already cooked, cook the brown rice according to package directions until tender, then keep warm.

Pat the sliced beef dry and season lightly with salt and pepper. Heat 1 tablespoon olive oil in a skillet over high heat. Sear the beef for 1-2 minutes until just browned, then remove to a plate.

Lower heat to medium. Add the remaining 1/2 tablespoon olive oil, the onion, and mushrooms. Cook 6-8 minutes, stirring, until the mushrooms release their liquid and turn golden. Add the garlic and cook 30 seconds more.

Stir the cornstarch into the fortified plant milk until smooth, then pour into the skillet along with the tamari and Dijon mustard. Simmer 2 minutes until the sauce thickens slightly.
