Galician Flaked Cod and Pimentón Potato Bite with Parsley Oil
A small Galician-style snack of flaked cod and warm pimentón potato finished with parsley olive oil and a squeeze of lemon.

Ingredients
- 60g cooked (≈70g raw)cod fillet
- 1small (80g cooked)potato, peeled and diced
- 1tsp (4g)extra-virgin olive oil
- 1/4tspsweet pimentón (smoked Spanish paprika)
- 1/2clove (1.5g)garlic, minced
- 1tbsp (3g)flat-leaf parsley, chopped
- 1/4(~5g juice)lemon, juiced
- 1pinchsea salt
- 1pinchblack pepper
Instructions

Place the diced potato in a small saucepan, cover with water, add a pinch of salt and bring to a boil. Cook 8-10 minutes until tender. Drain.

While the potato simmers, lower the cod into a separate small pan of barely-simmering salted water and poach 4-5 minutes until just opaque. Lift out and break into rough flakes with a fork.

Toss the warm potato with the pimentón, half the olive oil, and a pinch of salt and pepper.

In a small bowl, stir together the remaining olive oil, the chopped parsley, the garlic, and the lemon juice.

Plate the pimentón potato, top with the flaked cod, and spoon the parsley oil over the top.
