Ingredients

  • 5oz (140g)chicken breast
  • 1cup (90g)broccoli florets
  • 1small (130g)sweet potato, wedged
  • 1tbsp (14g)extra-virgin olive oil
  • 1/4(10g)lemon, juiced
  • 1pinchsea salt
  • 1pinchblack pepper

Instructions

    Heat the oven to 220°C (425°F). Toss the sweet potato wedges with half the olive oil, salt, and pepper, and roast 18 minutes.

    Season the chicken with salt and pepper. Grill on a hot pan with the remaining oil for 4 minutes per side.

    Steam the broccoli 3-4 minutes until tender-crisp.

    Plate the chicken, broccoli, and sweet potato; finish with lemon juice.
