Ingredients

  • 1fillet (5 oz / 142g)salmon
  • 3cups (90g)mixed greens
  • 1/2(100g)cucumber, sliced
  • 1small (90g)tomato, sliced
  • 2tbsp (28g)extra-virgin olive oil
  • 1/2(20g)lemon, juiced
  • 1pinchsea salt
  • 1pinchblack pepper

Instructions

    Season the salmon with salt and pepper. Grill on a hot pan with a teaspoon of the olive oil for 4 minutes per side, then flake.

    Whisk the remaining olive oil with the lemon juice in a bowl.

    Toss the greens, cucumber, and tomato with the dressing.

    Top with the flaked salmon.
