Levantine Sardine Mezze with Olives, Tomato and Za'atar Crackers

Ingredients
- 60gsardines, drained (canned in olive oil)
- 4(60g)cherry tomatoes, halved
- 4(15g)kalamata olives, pitted
- 4small (20g)gluten-free seed crackers
- 1/4tspza'atar
- 1tsp (5g)extra virgin olive oil
- 1wedge (10g)lemon
- 1tbsp (4g)flat-leaf parsley, chopped
- pinchsea salt
- pinchblack pepper
Instructions

Drain the sardines and arrange them down the center of a small plate.

Halve the cherry tomatoes and arrange them around the sardines.

Add the olives in a small cluster.

Lay the gluten-free crackers along one side of the plate. Drizzle them with the olive oil and dust with the za'atar.

Scatter the chopped parsley across the tomatoes and sardines. Season with a pinch of salt and pepper.

Place the lemon wedge alongside. Squeeze over the sardines just before eating.
