Ingredients

  • 60gsardines, drained (canned in olive oil)
  • 4(60g)cherry tomatoes, halved
  • 4(15g)kalamata olives, pitted
  • 4small (20g)gluten-free seed crackers
  • 1/4tspza'atar
  • 1tsp (5g)extra virgin olive oil
  • 1wedge (10g)lemon
  • 1tbsp (4g)flat-leaf parsley, chopped
  • pinchsea salt
  • pinchblack pepper

Instructions

  1. 01

    Drain the sardines and arrange them down the center of a small plate.

    Halve the cherry tomatoes and arrange them around the sardines.

  3. 03

    Add the olives in a small cluster.

  4. 04

    Lay the gluten-free crackers along one side of the plate. Drizzle them with the olive oil and dust with the za'atar.

  5. 05

    Scatter the chopped parsley across the tomatoes and sardines. Season with a pinch of salt and pepper.

  6. 06

    Place the lemon wedge alongside. Squeeze over the sardines just before eating.
