Libyan Spiced Lentil Bite with Lamb, Cumin and Lemon-Mint

Ingredients
- 1/3cup (70g cooked)red lentils, cooked
- 35g (cooked)lean ground lamb
- 1tsp (4g)extra-virgin olive oil
- 1small clove (2g)garlic, minced
- 1/2tspground cumin
- 1/4tspground coriander
- 1/4(~12g juice)lemon, juiced
- 1tbspfresh mint, chopped
- 1tspflat-leaf parsley, chopped
- pinchsea salt
- pinchblack pepper
Instructions

Warm the olive oil in a small skillet over medium heat. Add the minced garlic, cumin, and coriander and stir for 30 seconds until fragrant.

Add the cooked ground lamb and break it up with a wooden spoon. Cook for 2 minutes until heated through.

Stir in the cooked lentils with a splash of water. Simmer for 3 minutes until the lentils take on the spice.

Off the heat, stir in the lemon juice, salt, and pepper. Spoon into a small bowl and finish with the chopped mint and parsley.
