Ligurian Sardine and Brazil Nut Plate with Lemon, Tomato and Basil
A 10-minute Ligurian breakfast plate of sardines and a single Brazil nut shaved over warm tomato with lemon and basil — small composed plate, very high selenium per bite.

Ingredients
- 1tin (90g drained)sardines in olive oil
- 1nut (~5g)Brazil nut, raw
- 1medium (~120g)Roma tomato, sliced
- 1tsp (5g)extra-virgin olive oil
- 1/2(~12g juice)lemon, juiced
- 6leavesfresh basil, torn
- 1/2clove (1.5g)garlic, minced
- 1/8tspsea salt
- 1/8tspblack pepper
Instructions

Lay the sliced tomato on a plate. Sprinkle with sea salt and let sit for 2 minutes — the salt will draw out a little juice and concentrate the flavor.

Drain the sardines lightly (keep some of the oil for richness). Lay the sardines across the tomato.

Use a microplane or sharp knife to shave the single Brazil nut into thin curls. Scatter over the plate.

Drizzle with olive oil and lemon juice. Add the minced garlic and torn basil.

Finish with black pepper. Eat with a fork — no toast needed.
