Ingredients

  • 70g raw (~50g cooked)lean ground beef
  • 2tbsp (~16g)pumpkin seeds, raw
  • 1small (~80g)tomato, diced (or 1/2 cup canned crushed tomato)
  • 1 1/2cups (~45g)baby spinach
  • 1tbsp (~14g)extra-virgin olive oil
  • 2cloves (~6g)garlic, finely chopped
  • 1/4small (~25g)yellow onion, finely diced
  • 1/2tspsweet smoked paprika (pimentón dulce)
  • 1tbspfresh parsley, chopped
  • 1/4tspnon-iodized sea salt
  • 1/8tspblack pepper

Instructions

    Toast the pumpkin seeds in a dry small skillet over medium heat for 2-3 minutes, stirring, until they puff and pop. Tip them out onto a plate.

    Return the skillet to medium heat with the olive oil. Add the diced onion and a small pinch of salt; cook 2 minutes until softening.

    Add the ground beef and break it up with a wooden spoon. Cook 4 minutes, stirring, until browned through.

    Stir in the garlic and paprika; cook 30 seconds until fragrant. Add the diced tomato, the rest of the salt, and the pepper. Simmer 4 minutes until the tomato breaks down into a loose sofrito.

    Add the spinach in two handfuls, stirring each batch until just wilted (about 60 seconds total).

  6. 06

    Spoon into a shallow bowl. Top with the toasted pumpkin seeds and chopped parsley.
