Ingredients
- 50gquinoa, dry (rinsed)
- 150gcanned chickpeas, drained and rinsed
- 60gfresh spinach
- 2tbspnutritional yeast, fortified (about 10 g)
- 1tbspextra-virgin olive oil (15 ml)
- 1clovegarlic, minced
- 0.5wholelemon (for juice and zest)
- 80gcherry tomatoes, halved
- 0.25tspground cumin
- 1pinchsalt and black pepper, to taste

Rinse the quinoa, then combine with 120 ml water in a small pot. Bring to a boil, cover, reduce heat, and simmer 12-15 minutes until the water is absorbed and the grains are fluffy. Fluff with a fork.

While the quinoa cooks, heat the olive oil in a skillet over medium heat. Add the minced garlic and cumin and cook 30 seconds until fragrant.

Add the drained chickpeas and a pinch of salt. Saute 4-5 minutes, stirring, until lightly golden and warmed through.

Add the spinach to the skillet and toss for 1-2 minutes until just wilted. Stir in the halved cherry tomatoes and cook 1 more minute.

Spoon the warm quinoa into a shallow bowl, then top with the chickpea-spinach mixture.

Squeeze over the lemon juice, add a little zest, and sprinkle the nutritional yeast generously over the top. Finish with black pepper and serve.
