Ingredients
- 150gfirm tofu, drained
- 1tbspextra-virgin olive oil
- 80gcremini or white mushrooms, sliced
- 40gfresh spinach
- 1.5tbspfortified nutritional yeast (about 7.5 g)
- 0.25tspground turmeric (for color)
- 0.25tspgarlic powder
- 1pinchsalt
- 1pinchblack pepper
- 1tbspwater
Instructions

Drain the tofu and pat it dry with a clean towel or paper towel. Crumble it into bite-sized curds with your fingers or a fork.

Heat the olive oil in a non-stick skillet over medium heat. Add the sliced mushrooms and cook, stirring occasionally, for 4-5 minutes until softened and lightly browned.

Add the crumbled tofu, turmeric, garlic powder, salt, and pepper. Cook for 4-5 minutes, stirring now and then, until the tofu is heated through and lightly golden.
