Ingredients
- 5oz (140g)pork tenderloin, sliced into medallions
- 1cup (90g)brussels sprouts, halved
- 1tbsp (14g)extra-virgin olive oil
- 1clove (3g)garlic, minced
- 1sprigthyme
- 1pinchsea salt
- 1pinchblack pepper
Instructions

Heat the oven to 220°C (425°F). Toss the brussels sprouts with half the olive oil, salt, and pepper, and roast 18 minutes.

Pat the pork medallions dry, season with salt and pepper. Heat the remaining oil with the garlic and thyme in a skillet over medium-high heat.

Sear the pork 3 minutes per side until golden and cooked through.

Plate together.
