Ingredients
- 40graw pumpkin seeds (pepitas)
- 45gdried apricots (unsulfured), about 5 halves
- 20ggluten-free rolled oats
- 15gdried goji berries (unsulfured)
- 1tspfinely grated orange zest
- 1tbspalmond butter (15 g)
- 1tsphoney or maple syrup
- 1pinchfine sea salt

Set aside about 1 tablespoon of the pumpkin seeds. Add the remaining pumpkin seeds, the oats, and the goji berries to a food processor and pulse until coarsely ground with a little texture remaining.

Add the dried apricots, almond butter, honey, orange zest, and pinch of salt. Process until the mixture clumps together and holds when pressed between your fingers. If it feels dry, add a few drops of water; if too sticky, add a teaspoon more oats.

Roughly chop the reserved pumpkin seeds. Scoop the mixture into 3 to 4 portions and roll each into a ball, then press the chopped seeds onto the outside.

Chill in the fridge for at least 10 minutes to firm up. Store any leftovers in an airtight container in the fridge for up to a week.
