Ingredients

  • 1fillet (5 oz / 150g)cod
  • 1/2cup (75g)cherry tomatoes, halved
  • 10(40g)green olives, pitted
  • 2tbsp (28g)extra-virgin olive oil
  • 1clove (3g)garlic, minced
  • 1tbsp (4g)parsley, chopped
  • 1pinchsea salt
  • 1pinchblack pepper

Instructions

    Heat the oven to 220°C (425°F). In an oven-safe dish, combine the tomatoes, olives, garlic, and olive oil; roast 8 minutes.

    Nestle the cod into the dish, season with salt and pepper, and roast 10-12 more minutes until the fish flakes.

    Finish with parsley.
