Ingredients

  • 170gsalmon fillet, skin-on
  • 120gcherry tomatoes, whole
  • 120ggreen beans, trimmed
  • 1.5tbspolive oil
  • 1clovegarlic, thinly sliced
  • 0.5unitlemon (half for slices, half for juice)
  • 0.25tspsalt
  • 0.25tspblack pepper
  • 1tbspfresh parsley or basil, chopped

Instructions

    Preheat the oven to 220C (425F) and line a sheet pan with parchment.

    On the pan, toss the green beans and cherry tomatoes with 1 tbsp olive oil, the sliced garlic, and half the salt and pepper. Spread in a single layer and roast for 6 minutes.

    Pat the salmon dry. Push the vegetables to the edges and place the salmon skin-side down in the centre. Drizzle with the remaining 0.5 tbsp olive oil, season with the rest of the salt and pepper, and lay 2 thin lemon slices on top.

    Roast everything together for 10 to 12 more minutes, until the salmon flakes easily and the tomatoes have burst. Total oven time is about 18 minutes.

    Squeeze the remaining lemon over the top, scatter with parsley or basil, and serve straight from the pan.
