Ingredients

  • 60gsmoked salmon, sliced
  • 2tbsp (30 g)dairy-free cream cheese alternative
  • 1tbspfresh dill, chopped
  • 2tspfresh lemon juice
  • 1pinchblack pepper

    Trim the ends off the cucumber. Using a vegetable peeler or mandoline, shave the cucumber lengthwise into long, thin ribbons. Aim for 8 to 10 sturdy ribbons; pat them dry with a paper towel so the filling sticks.

    In a small bowl, stir together the dairy-free cream cheese, chopped dill, lemon juice, and a pinch of black pepper until smooth and spreadable.

    Lay a cucumber ribbon flat. Spread a thin layer of the herbed cream cheese along its length, then top with a small strip of smoked salmon.
