Ingredients
- 60gfresh baby spinach (about 2 large handfuls)
- 1mediumripe banana (about 118 g), peeled
- 1mediumorange (about 130 g), peeled and segmented
- 30gpumpkin seeds (about 3 tbsp)
- 15gtahini (1 tbsp)
- 15gblackstrap molasses (1 tbsp)
- 240mlhigh-iron fortified soy milk, unsweetened
- 3cubesice (optional)
Instructions
- 01
Add the fortified soy milk to the blender first, then the spinach, banana, orange segments, pumpkin seeds, tahini and blackstrap molasses.
- 02
Blend on high for 45 to 60 seconds, until completely smooth and bright green with no flecks of seed or spinach remaining.
- 03
Add the ice cubes if you'd like it colder and blend for another 10 seconds. Loosen with a splash more soy milk if it's thicker than you like.
- 04
Pour into a tall glass and drink right away while it's freshest. The vitamin C from the orange works best alongside the iron when consumed fresh.
