Ingredients

  • 1small (130g)sweet potato, diced
  • 1/4(40g)onion, diced
  • 2large (100g)eggs
  • 1tbsp (14g)extra-virgin olive oil
  • 1pinchsea salt
  • 1pinchblack pepper

Instructions

    Heat the olive oil in a skillet over medium heat. Add the sweet potato and onion, season with salt and pepper, and cook 10-12 minutes, stirring occasionally, until tender and browned.

    Push the hash to one side of the pan and crack in the eggs.

    Cook the eggs to your liking, then plate over the hash.
