A small Thessalian-style snack — flaked sardines tossed with lemon, oregano, and olive oil, spooned onto gluten-free toast and finished with parsley. A half tin of sardines lands more than three times the daily B12 target in a single bite.

Ingredients
- 1/2tin (45g drained)sardines, oil-packed
- 1small slice (25g)gluten-free country bread
- 1tsp (4g)extra-virgin olive oil
- 1/2(~20g juice)lemon, juiced
- 1/4tspdried oregano
- 1tbspflat-leaf parsley, chopped
- 1small clove (2g)garlic, halved
- pinchsea salt
- pinchblack pepper
Instructions

Toast the gluten-free bread in a dry skillet over medium heat for 1 minute per side until lightly golden.

Rub the warm toast with the cut side of the garlic and drizzle with the olive oil.

Drain the sardines and flake them into a small bowl. Toss with the lemon juice, oregano, salt, and pepper.

Spoon the sardines onto the toast and finish with the chopped parsley.
