Ingredients
- 150gfirm calcium-set tofu, drained
- 100gstrawberries, fresh or frozen (about 6 medium)
- 30gbaby spinach (about 1 packed cup)
- 120mlorange juice
- 1smallbanana (about 120 g)
- 200mlfortified soy milk
- 1tbsppumpkin seeds (about 9 g)
- 1tsppure maple syrup (optional, to taste)
Instructions

Drain the tofu and pat it dry with a paper towel. Cut it into a few rough chunks so it blends smoothly.

Add the tofu, strawberries, spinach, orange juice, banana, and fortified soy milk to a blender.

Blend on high for 45 to 60 seconds, until completely smooth and creamy. Add a splash more soy milk if you prefer a thinner texture.

Taste and blend in the maple syrup if you'd like it a touch sweeter.

Pour into a tall glass, scatter the pumpkin seeds on top, and serve right away.
