Tunisian Tuna and Harissa-Chickpea Bite with Cumin and Parsley
A small Tunisian snack of olive-oil-packed tuna and harissa-spiked chickpeas on gluten-free flatbread, finished with cumin, parsley and lemon.

Ingredients
- 50g (drained)yellowfin tuna in olive oil
- 1/4cup (40g cooked)chickpeas, drained
- 1small (20g)gluten-free flatbread or pita
- 1tsp (4g)extra-virgin olive oil
- 1/2tsp (3g)harissa paste
- 1/4tspground cumin
- 1/2clove (1.5g)garlic, minced
- 1tbsp (3g)flat-leaf parsley, chopped
- 1/4(~5g juice)lemon, juiced
- 1pinchsea salt
Instructions

Warm the gluten-free flatbread in a dry pan over medium heat for 30 seconds per side. Tear or cut into two wedges.

In a small bowl, mash half the chickpeas with the harissa, cumin, garlic and a pinch of salt. Stir in the rest of the chickpeas whole and the olive oil.

Lift the tuna from the tin, drain lightly, and break into rough flakes with a fork.

Spread the harissa-chickpea mash onto the flatbread wedges. Top with the tuna flakes.

Squeeze the lemon over the bites, scatter the chopped parsley, and finish with a small pinch of cumin.
