Turkish Menemen with Smoked Trout, Tomato & Sumac

Ingredients
- 2large (100g)eggs
- 80gsmoked trout, hot-smoked, flaked
- 1/2medium (75g)tomato, finely diced
- 1/4small (25g)yellow onion, finely diced
- 1tbsp (14g)extra virgin olive oil
- 1/4tspturmeric, ground
- 1/4tspsumac
- 1tbsp (4g)fresh dill, chopped
- 1/8tspsea salt
- 1/8tspblack pepper
Instructions

Heat olive oil in a small skillet over medium heat. Add the diced onion with a pinch of salt and cook 3 minutes until soft and translucent.

Add the diced tomato and turmeric. Cook 3-4 minutes, stirring occasionally, until the tomato breaks down into a loose sauce.

Lightly beat the eggs in a small bowl with the remaining salt and the black pepper.

Reduce heat to low. Pour the eggs over the tomato base. Stir gently with a silicone spatula in slow figure-eights for 2 minutes — the eggs should be soft and just set, not dry.

Slide onto a plate. Top with the flaked smoked trout and chopped dill.

Finish with a dusting of sumac and serve immediately.
