
Asturian Fabada-Style Pork with Saffron, White Beans and Pumpkin-Seed Picada
A lighter weekday riff on Asturias' fabada — pork tenderloin medallions seared with smoked pimentón and saffron, simmered briefly with creamy fabes (white beans), and finished with a pumpkin-seed picada that lifts the dish with crunch and zinc.

Ingredientes
- 90g (raw)pork tenderloin, sliced into medallions
- 100g (cooked)white beans (fabes or cannellini), drained
- 20gpumpkin seeds, toasted
- 1small (50g)egg, soft-boiled
- 1tbsp (14g)extra virgin olive oil
- 2cloves (6g)garlic, finely chopped
- 1small (60g)yellow onion, finely diced
- 1tsp (3g)smoked sweet paprika (pimentón dulce)
- 1pinch (~0.05g)saffron threads
- 1(1g)bay leaf
- 1tbsp (4g)flat-leaf parsley, chopped
- 100mllow-sodium vegetable broth
- 1/4tsp (1.5g)sea salt
- 1/8tspblack pepper

Toast the pumpkin seeds in a dry small skillet over medium heat for 2 minutes until they puff. Tip into a small bowl and reserve.

In the same skillet, warm the olive oil over medium. Add the diced onion and cook 6-7 minutes until soft and translucent.

Add the garlic, pimentón and saffron threads. Stir 30 seconds to bloom — the oil should turn deep red.

Push the aromatics to one side. Season the pork medallions with salt and pepper and sear them on the empty side, 90 seconds per face, until lightly browned.

Add the broth, bay leaf and white beans. Simmer 8 minutes uncovered, letting the liquid reduce by half and the saffron infuse.

Meanwhile, soft-boil the egg: lower into simmering water, cook 6 minutes, transfer to ice water, peel and halve.

Make the picada: chop the toasted pumpkin seeds with the parsley until coarse.

Discard the bay leaf. Plate the pork and beans, top with the soft-boiled egg halves, and shower with the pumpkin-seed picada.
