Asturian Warm White Bean Bite with Brazil Nut and Sunflower Picada

A small Asturian snack of warm white beans dressed with cider vinegar, topped with a Brazil-nut and sunflower-seed picada, parsley and good olive oil.

Ingredientes

  • 1/2cup (100g cooked)white beans (cannellini), drained
  • 1small (4g)Brazil nut, finely chopped
  • 1tbsp (10g)sunflower seeds, toasted
  • 1tsp (4g)extra-virgin olive oil
  • 1/2tsp (3g)apple cider vinegar
  • 1/2clove (1.5g)garlic, minced
  • 1tbsp (3g)flat-leaf parsley, chopped
  • 1pinchsea salt
  • 1pinchblack pepper

Preparación

    Toast the sunflower seeds in a small dry pan over medium heat for 1 minute, shaking often, until they smell nutty. Tip onto a plate to cool.

    Add the olive oil to the same pan. Add the garlic and cook 20-30 seconds, just until fragrant.

    Add the white beans and warm through, 2 minutes. Off the heat, stir in the cider vinegar with a pinch of salt and pepper.

    On a board, finely chop the Brazil nut and combine it with the cooled sunflower seeds and a third of the parsley to make a quick picada.

  5. 05

    Spoon the warm beans into a small bowl. Scatter the picada and remaining parsley on top.
