Ingredientes

  • 5oz (140g)chicken breast, diced
  • 1/2cup cooked (90g)quinoa
  • 1/2(100g)cucumber, diced
  • 1small (90g)tomato, diced
  • 1tbsp (4g)parsley, chopped
  • 1tbsp (14g)extra-virgin olive oil
  • 1/4(10g)lemon, juiced
  • 1pinchsea salt

Preparación

    Cook the quinoa per package instructions.

    Heat half the olive oil in a skillet over medium-high heat. Season the chicken with salt and cook 5-6 minutes, stirring, until browned.

    Whisk the remaining oil with the lemon juice.

    Plate the quinoa, chicken, and vegetables; toss with the dressing and finish with parsley.
