- 1/2cup cooked (90g)quinoa
- 1/2(100g)cucumber, diced
- 1small (90g)tomato, diced
- 1tbsp (4g)parsley, chopped
- 1tbsp (14g)extra-virgin olive oil
- 1/4(10g)lemon, juiced
- 1pinchsea salt

Cook the quinoa per package instructions.

Heat half the olive oil in a skillet over medium-high heat. Season the chicken with salt and cook 5-6 minutes, stirring, until browned.
