Chicken with Sautéed Spinach and Quinoa
Pan-seared chicken breast over quinoa with sautéed spinach and garlic.

- 5oz (140g)chicken breast
- 1/2cup cooked (90g)quinoa
- 2cups (60g)baby spinach
- 1tbsp (14g)extra-virgin olive oil
- 1clove (3g)garlic, minced
- 1/4(10g)lemon, juiced
- 1pinchsea salt
- 1pinchblack pepper
Preparación

Cook the quinoa per package instructions.

Heat half the olive oil in a skillet over medium-high. Season the chicken with salt and pepper, then sear 5 minutes per side. Rest.

In the same pan, add the remaining oil, garlic, and spinach; toss until just wilted.

Slice the chicken, plate over the quinoa with the spinach, and finish with lemon.
